Pan sear breasts in bacon grease over medium heat for 12 minutes, turning every 3 minutes, or until juices run clear. Place in baking dish and set aside.<\/li><li>Preheat oven to 400\u2109<\/li><li>Add flour, 1\/2 tsp salt, and 1\/16 tsp pepper to grease and cracklings in skillet. Add butter, if needed, to form roux. Cook, stirring constantly, until golden brown and flour smells toasted.<\/li><li>Pour in chicken broth. Cook, stirring constantly, until thickened.<\/li><li>Pour 1\/4 cup gravy over each chicken breast in baking dish.
