{"id":290,"date":"2020-08-08T20:52:56","date_gmt":"2020-08-08T20:52:56","guid":{"rendered":"https:\/\/cookbook.deamaree.com\/?p=290"},"modified":"2020-08-09T16:51:33","modified_gmt":"2020-08-09T16:51:33","slug":"deas-enchiladas","status":"publish","type":"post","link":"https:\/\/cookbook.deamaree.com\/?p=290","title":{"rendered":"Dea&#8217;s Enchiladas"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\"><strong>Ingredients<\/strong><\/h2>\n\n\n\n<h4 class=\"wp-block-heading\">Filling:<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>2 lbs boneless chicken breasts (fresh or frozen)<\/li><li>1 tsp garlic powder<\/li><li>3 Tbsp dry Minced Onion<\/li><li>1 can petite diced tomatoes in tomato juice, undrained*<\/li><li>1 tsp ground black pepper<\/li><li>1 Tbsp dried cilantro (or to taste)<\/li><li>2 Tbsp ground cumin<\/li><li>1 tsp salt (or to taste)<\/li><li>1 cup chicken <a rel=\"noreferrer noopener\" href=\"https:\/\/cookbook.deamaree.com\/2020\/08\/08\/broths\/\" target=\"_blank\">broth<\/a><\/li><\/ul>\n\n\n\n<p>*(if using fresh diced tomatoes, use 1.5 cups and add 4 oz tomato sauce or juice; if using canned diced tomatoes in water, drain, and add 4 oz tomato sauce or juice)<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Enchiladas:<\/h4>\n\n\n\n<p>Prepared filling<br>4 Tbsp butter<br>3 Tbsp <a rel=\"noreferrer noopener\" href=\"\/2020\/08\/08\/onions-fresh-and-reconstituted\/\" target=\"_blank\">dry minced onion, reconstituted<\/a><br>1\/2 tsp garlic powder<br>4 Tbsp flour<br>2 cups chicken <a rel=\"noreferrer noopener\" href=\"https:\/\/cookbook.deamaree.com\/2020\/08\/08\/broths\/\" target=\"_blank\">broth<\/a><br>2 cups milk<br>1\/2 tsp salt<br>1\/2 tsp ground cumin<br>1 package (20 count) Fajita-sized flour tortillas<br>Cheese (I use fiesta blend, but cheddar works well, too)<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<h4 class=\"wp-block-heading\">Filling:<\/h4>\n\n\n\n<ol class=\"wp-block-list\"><li>Place all filling ingredients into crock-pot. Cover and cook on low for 6 to 8 hours.<\/li><li>Remove lid and shred chicken (it should fall apart rather easily). Stir well. Replace lid and continue simmering on low while you prepare everything else.<\/li><\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">Enchiladas:<\/h4>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat oven to 350\u00ba.<\/li><li>Mix flour, salt, and cumin in small dish.<\/li><li>In saucepan, melt butter over medium heat. Add onion and garlic; saut\u00e9 until onion is soft.<\/li><li>Blend in flour mixture; cook and stir until smooth and bubbly.<\/li><li>Stir in broth and milk. Cook and stir until it begins to thicken and bubble. Reduce heat. Simmer 5 minutes &#8211; or until desired consistency (it is a <strong>thin<\/strong> sauce) &#8211; stirring occasionally. Remove from heat.<\/li><li>Prepare casserole dishes (I use 1 2 qt rectangular and 1 3 qt rectangular) by spooning a little sauce in the bottom of each to avoid sticking, tilt to coat.<\/li><li>Turn off crock-pot. Drain chicken through a strainer to remove excess liquid.<\/li><li>Warm tortillas in microwave slightly to soften and making rolling easier and to avoid them cracking.<\/li><li>Spoon a little sauce in the center of each tortilla; spread to edges<\/li><li>Place 3 Tbsp filling down the center of each tortilla; sprinkle 2 Tbsp cheese on top of meat (I don&#8217;t actually measure the cheese).<\/li><li>Roll and place in baking dish, seam side down. (I fit 12 in the 3 quart dish and 8 in the 2 quart. If there are extra tortillas and filling (sometimes the tortilla package has 21 or 22 in it) I fit them along the side of the 3 quart dish)<\/li><li>Pour any remaining sauce over enchiladas; sprinkle top with more cheese.<\/li><li>Bake, uncovered for 20-30 minutes or until hot and bubbly.<\/li><li>Serve with sour cream and salsa.<\/li><\/ol>\n\n\n\n<h2 class=\"wp-block-heading\">Notes<\/h2>\n\n\n\n<p>Filling can be prepared on the stove-top. I will add those directions later.<\/p>\n\n\n\n<p>This is a HUGE recipe.
